Most of our ingredients are from California farms. Since day one, we have been building relationships with local farmers. We are lucky to have an abundance of incredible produce and fruit in our state. We have highlighted some of our staples below.

Pistachios

Lincoln, California

We source our pistachios from the oldest pistachio-growing farm in California. Unlike some ice cream producers who use blended nut oils and electric green dyes, we use 100% real pistachios. This is how you can tell ours is different. Pistachios, when ground into a nut butter or paste for use in making gelato or ice cream, aren’t really green. This paste is light brown, with only the slightest green hue.

Gaviota Strawberries

We procure ripe, organic, gaviota strawberries from a local California farm for our dairy-free take on the classic Strawberry Balsamic Sorbet. Our strawberries are small, packed with flavor, unlike their giant supermarket cousins.

Baku Saffron

Everyone always told me - you have to have a flavor from your home country. So, I picked one. Saffron is very precious, derived from the dried stigmas of the delicate crocus flower. It is used in Azerbaijan to flavor everything from traditional rice dishes and savory stews to baklavas and other sweet pastries. Its presence is synonymous with decadence.

You have never tasted blueberries like the plum-like pearls grown at Murray Family Farms. Visitors to our shops often tell us this summertime bestseller causes them to fall in love with blueberries for the very first time.

Olive Oil

We get our Olive Oil straight from the mill during fall’s olive harvest at Rio Bravo Ranch, then churn it into our most luscious gelato. Sometimes, we have a limited edition Olio Nuovo flavor, which is the first extra virgin olive oil. It bursts with fresh olive aroma because it is bottled before the rest of the batch is left to settle and filter.

Meyer Lemons

Every winter, we get the most amazing citrus, including a wealth of Meyer lemons. A cross between a lemon and mandarin orange, Meyer lemons have the perfect balance of bright acid and fruity sweetness. They make the most refreshing, creamy, vegan sorbet.

Fresh Mint

Mint extract would be oh so easy but we had to make it hard. A simple ingredient. We decided for all flavors that have mint, we are going to use ONLY fresh mint, picking each leaf individually. Worth it.
